This is the basic rub we use on ribs, but it can be used on any pork product. It's also decent on poultry or fish, but we don't really prefer it for beef.
What you will need:
- Salt (not too heavy, ya fuck!)
- Black Pepper
- White Sugar
- Light Brown Sugar (this is the base of the rub, so don't be bashful with it!)
- Smoked Paprika
- Ground Mustard
- Onion Powder
- Ground Chipotle Pepper (Optional! This shit is pretty spicy, so apply according to the tastes of the biggest spice-pussy in the house. You can also finish your meat with a dusting of Chipotle if you are the only one brave enough for the heat.)
I use a mini-wisk or fork to combine the spices really well, although you could use your fingers instead. Your rub should turn out to be a fire-orange color, with some hints of yellow from the ground mustard and some hints of black from the pepper.
