Breakfast Sausage Seas'nin (SBQ, Ep. 5)

This is a conglomeration of various B-Saus recipes we've encountered over the years, simplified greatly to produce a no-bullshit flavor profile reminiscent of your favorite American Diner's sausage recipe.  After cooking up a few of these patties, you'll be hankering for a lady named Florence to bring you black coffee and call you "Hun".

What you will need:

  • 2 tsp. Salt
  • 1 tsp. Black Pepper
  • 1/4 tsp. White Pepper
  • 1/4-1/2 tsp. Red Pepper
  • 2.5 tsp. Ground Sage
  • 1 PINCH Ground Clove
  • 1 Tbsp. Brown Sugar

NOTE:  All measurements are determined using two pounds (2 lbs.) of coarsely ground pork.  When selecting your meat, try to find the packages with the deepest pink color.  Pale/Whitish meat should be avoided, because the pork flavor will be muted and the meat itself is of a lower quality, nutritionally speaking.  You could also use pre-seasoned B-Saus from the butcher, or any brand you prefer from the meat aisle.

ALSO NOTE:  Work with cold meat, but not frozen!
